NB: THE MEAD WILL NOT BE READY TO DRINK FOR A YEAR! :no: :**:

3 lbs honey
2 egg whites
1 oz yeast
1 lemon
1 gallon cold water

Grate rind of lemon into large saucepan with the honey and the gallon of cold water.

Beat the two egg whites until frothy and add to the pan of ingredients.

Place the pan over a low heat and stir until the mixture comes to boil, then simmer gently for one hour.

Pour the mixture into a large bowl, and leave until it is lukewarm, then stir in the yeast.

Cover the bowl and leave in a warm place for three days, stirring daily.

Strain through muslin and bottle, but cork loosely! Push the corks down gradually as fermentation ceases, and store the bottles in a cool, dark place. It will be ready to drink in one year.:lalala: :))
